Cauliflower Parsley Poppers

A great snack or side dish

Serves 6

1 – 2 tbls Olive Oil

1 Large Head Cauliflower

1 Large Bunch Parsley

Sea Salt to Taste

Preheat oven to 425 degree. Cut cauliflower into small, 1 inch florets.  Chop parsley, into small bits but not fine. In a large bowl, toss all together with some healthy sea salt. Then spread evenly on two lightly oiled baking sheets. Use two baking sheets so there is room between florets. Do not cover. Bake for 10 minutes then flip with a spatula or shake around so they brown evenly. Roast for another 7 to 10 minutes. Taste or test with a fork for tenderness. Cool before serving. Can be served at room temperature too.

Variation: while all the ingredients are in the mixing brown you could add in a bit of Tamari or Brags Liquid Aminos to the mixture. Or add 1 tblsp of dried un-sweetened shredded coconut for a richer taste.
